CINNAMON BRAN MUFFINS | |
2 c. Kellogg's All Bran Cereal 1 1/2 c. skim milk 1 1/4 c. flour 1/4 c. sugar or equal or splenda 4 tsp. baking powder 1 1/2 tsp. cinnamon 1/4 c. apple butter OR 1/4 c. unsweetened apple sauce 1 egg OR 1/3 c. egg substitute 1/4 c. raisins or cranberries 1/4 c. walnut pieces or fresh cranberries or blueberries 1 large rind of orange Combine cereal and milk, stir well and let stand 15 minutes. Combine flour, sugar, cereal and raisins, stirring just to moisten dry ingredients. Fold in walnuts or berries. Spray muffin tins with non-stick. Fill 12 medium muffin cups 3/4 full with batter. Bake approximately 20 minutes at 350°F. Allow to sit 5 minutes before serving. |
