CHEESE-PUFFED POTATO CASSEROLE 
4 eggs, separated
4 c. well-seasoned mashed potatoes
1 c. shredded sharp Cheddar cheese
2 tsp. finely chopped onion
2 tsp. finely chopped green pepper
1/2 tsp. celery salt
Salt
Paprika

Beat egg yolks with mashed potatoes until well mixed. Stir in cheese, onion, green pepper, celery salt and salt to taste.

Just before you are ready to bake, beat egg whites until they form soft peaks and fold into potato mixture. Spoon lightly into a well-greased casserole, about 7x13 inches, sprinkle with paprika and bake in a moderate hot 375 degree oven for 25 minutes. Makes about 6 servings.
