ELEGANT CHEESE POTATO CASSEROLE 
8 potatoes
1 x 2 x 6 inch stick of sharp cheese, grated
1 tbsp. horseradish
3 oz. cream cheese, softened and cut into chunks

WHITE SAUCE:

4 tbsp. butter, melted
1/4 c. flour
1 qt. whole milk

Peel, sliced thin and parboil enough potatoes to fill a 10 x 13 inch baking dish. Prepare white sauce by combining flour and milk (add gradually) and cooking until thickened. Add cheese, horseradish, and cream cheese. Arrange potatoes in greased pan and pour sauce over them. Sprinkle with red paprika and put on hold until 20 minutes before serving. Bake at 350 degrees until lightly brown. This recipe could be cut down to serve for supper time.
