GRILLED POTATOES 
3 baking potatoes
1 tbsp. fresh basil
1 tbsp. thyme
2 tbsp. chopped garlic
1 tbsp. black pepper
2 tbsp. mint
1 tbsp. tarragon
1 c. olive oil

Horizontally slice potatoes 1/4 inch thick. Mix all other ingredients. Toss potatoes in herb and oil mixture. Let marinate 1 hour. Grill on barbecue. This recipe can be used with zucchini and eggplant!
