DATE REFRIGERATOR COOKIES 
1 c. shortening
2 c. brown sugar, packed firmly
2 eggs
1 c. dates, cut in pieces
1 tsp. vanilla
3 c. flour, sifted
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt

Cream shortening and sugar. Add eggs and beat well. Stir in dates and vanilla. Sift flour with salt, baking powder, and soda and add to creamed mixture. Shape into rolls about 2 inches in diameter. Wrap in waxed paper and place in refrigerator overnight. Cut into 1/4 inch slices and bake at 375 degrees on a buttered or sprayed cookie sheet for 10 minutes. Remove immediately from sheet and cool. Makes 5 dozen cookies.
