REFRIGERATOR OATMEAL COOKIES 
3 c. Quick Mother's Oats
1 1/2 c. flour
1 c. white sugar
1 c. dark brown sugar, packed
1 c. Crisco, packed and rounded up
1 tsp. baking soda
1 1/4 tsp. salt
1 tsp. vanilla
2 eggs

Toss together oats, flour, sugars, soda and salt. Mix well and add Crisco to dry ingredients, cut in or use fork. Add eggs and vanilla. Roll into 2 long rolls on waxed paper and roll up. Refrigerate overnight. Cut into 1/2 or 3/4 inch slices, put 3 to a row on greased cookie sheet. Bake at 350 degrees until flat and brown. Can freeze rolls for future use.
