MINCEMEAT REFRIGERATOR COOKIES 
2 c. sifted flour
1/2 tsp. salt
1/2 tsp. baking soda
1 tsp. cinnamon
1 c. granulated sugar
3/4 c. shortening
1 egg
1/2 tsp. vanilla
1 c. mincemeat
1 tsp. grated lemon rind
1/2 c. chopped nuts

Sift together first 4 ingredients. Mix shortening, egg, sugar and vanilla until creamy. Stir in flour, mix alternately with mincemeat, add lemon rind and nuts. Mix well. Shape, wrap and chill in refrigerator. Slice dough 1/2" thick and place on ungreased cookie sheet. Bake for 15 minutes at 375 degrees. Makes 6 dozen.
