MINCEMEAT REFRIGERATOR COOKIES | |
3/4 c. shortening 1 c. sugar 1/2 tsp. vanilla 1 egg, beaten 2 1/2 c. sifted flour 1/2 tsp. baking powder 1/2 tsp. salt 1 tsp. cinnamon 1/2 c. mincemeat 1/2 c. chopped nuts Cream together shortening and sugar until light and fluffy. Add vanilla and eggs; mix well. Sift together flour, soda, salt and cinnamon. Fold gradually into creamed mixture alternately with mincemeat. Add nuts. Mix into a stiff dough; form into rolls. Wrap in wax paper and store in refrigerator. Slice 1/4 inch thick and bake on ungreased cookie sheet in medium 375 degrees for about 15 minutes. Makes 7 dozen. |
