HOT CHINESE CHICKEN SALAD 
2 c. cooked diced chicken or turkey
1 c. cooked rice
1 c. diced celery
1 can cream of chicken soup (undiluted)
1 can water chestnuts, sliced
1/2 c. cashews
1/2 c. mayonnaise
2 tbsp. soy sauce
1 med. onion, chopped
1 c. Chinese noodles

Mix well all ingredients and put into 9 x 13 inch casserole dish. Top with Chinese noodles. Bake at 350 degrees for 30 minutes. Serves 6-8.
