MOCHA MARSHMALLOW CREAM PIE | |
1 (9 inch) pie shell 1 c. heavy cream 1 1/2 c. milk 1 1/2 oz. unsweetened chocolate 1/3 c. sifted all-purpose flour 2 1/2 tsp. soluble coffee 3/4 c. sugar 1/4 tsp. salt Bake pie shell. Combine in top of double boiler heavy cream, milk, unsweetened chocolate. Heat until chocolate melts, stirring occasionally. Pour hot chocolate mixture over the dry ingredients; blend well. Cook until thick and smooth, about 20 minutes, stirring frequently. Cool slightly. Add 2 beaten eggs. Cook about 3 minutes. Remove from heat. Cool, then fold in 12 marshmallows chopped. (Don't stir to melt marshmallows - they should give pie a bumpy look.) Chill about one hour. Pour into pie shell and chill until firm. Swirl top with whipped cream. Serves 6. |
