LUNCHEON CHICKEN SALAD 
3 c. cooked, diced chicken
1 c. diced celery
1 c. diced pineapple
1 can mandarin oranges, drained
1/2 c. chopped nuts
1/2 c. mayonnaise
2 tbsp. salad oil
2 tbsp. orange juice
2 tbsp. vinegar
Dash of salt
Dash of marjoram
Dash of thyme
Dash of rosemary

Combine chicken, celery, fruit and nuts. Add oil, juice, vinegar and seasonings. Let stand 1 hour and drain. Add mayonnaise and toss lightly. Serve in lettuce cups.
