ZACHARY'S PORCUPINE MEATBALLS | |
1 lb. ground beef 1/2 c. rice, uncooked 1/4 c. chopped onions 1/4 tsp. salt 1/8 tsp. pepper 2 tbsp. salad oil 1 can tomato soup 1/2 can water 2 tbsp. minced parsley Mix ground beef, rice, onion, salt and pepper. Shape into 1 1/2 inch balls. Fry in skillet with salad oil, turning to brown. Spoon off fat. Mix soup, water and parsley. Pour over meatballs. Cover and simmer over medium-low heat for 30 minutes or until rice is done and pops out of meatballs. |
