BRAZILIAN POTATO SALAD 
1 pkg. frozen green beans
1 pkg. frozen baby carrots
3 lg. baking potatoes, peeled & quartered
1/2 of a lg. onion, chopped
1 c. or more mayonnaise
1 tbsp. lemon juice
Salt & pepper to taste

Cook green beans until tender. Cook carrots until tender. Cook potatoes until tender. Drain and cool completely. Toss together in a large bowl; then add remaining ingredients to taste. (This will taste like potato salad with a twist.) Chill 1 hour or longer.
