CHICKEN VEGETABLE STIR-FRY 
1 whole chicken breasts, skinned, boned
1/2 tsp. sugar
2/3 c. water
1 lg. carrot, cut into strips
1 med. onion, sliced
1 green pepper, in strips
1 c. sliced fresh mushrooms
2 tbsp. cornstarch, divided
3 tbsp. soy sauce, divided
1 clove garlic, minced
2 tbsp. vegetable oil, divided

Cut chicken in thin strips. Combine 1 tablespoon each of cornstarch and soy sauce. Stir in chicken; let stand 30 minutes. Combine water and remaining cornstarch and soy sauce. Heat 1 tablespoon oil in wok or large skillet until hot. Stir fry chicken 2 to 3 minutes. Remove from pan. Heat remaining oil; add veggies, stir fry 2 minutes. Return chicken to skillet, stir in soy sauce mixture. Cook until thickened. Serve with rice. This can be mixed with 1 box prepared UNCLE BEN'S® long grain and wild rice to have an easy casserole dish.
