MAKE AHEAD MASHED POTATO
CASSEROLE
 
8 russet potatoes
butter
Salt
8 oz. cream cheese
1/4 c. sour cream

Day Before: Peel, boil and mash potatoes with a small amount of butter and salt. Add cream cheese and sour cream. Put mixture into casserole dish and dot with butter.

Next day: Bring to room temperature, then bake, uncovered in a 350 degree oven for 30 minutes or until heated through.
