CARROT-PINEAPPLE CAKE 
3 c. flour
2 tsp. cinnamon
2 c. sugar
1 1/2 c. cooking oil
2 c. peeled and grated carrots
1/2 c. chopped pecans
1 tsp. baking soda
1 tsp. salt
3 eggs
1 tsp. vanilla
1 (8 oz.) can crushed pineapple

Combine and sift together flour, soda and cinnamon, salt and sugar. In bowl or pitcher beat together eggs, oil and vanilla. Add to dry ingredients with carrots, pineapple and pecans. Mix well by hand. Pour into greased and floured 10 inch tube pan and bake in preheated 300 degree oven 1 1/2 hours or until it tests done.
