DINNER CARROT BREAD 
1 c. shortening (1/2 butter, 1/2 butter)
1/2 c. brown sugar
1 tbsp. hot water
1 egg
1 1/4 c. flour
1 tsp. baking soda
1 c. grated carrots
1/2 tsp. vanilla
1/8 tsp. salt

Cream shortening and brown sugar. Add hot water, egg, flour and soda. Stir in grated carrots, vanilla and salt. Mix well. Grease round Jello mold and place carrot mixture in. Mixture will be thick. Bake 30 minutes at 350 degrees. Invert on serving plate immediately. May serve with peas in center.
