BEEF AND RICE FLORENTINE 
3/4 lb. ground beef
1 tbsp. oil
1 tbsp. finely diced onion
1 (10 oz.) pkg. frozen chopped spinach
1 c. water
1 med. tomato, diced
1 tsp. salt
1 tsp. oregano
1 1/2 c. dry Minute Rice
1 tbsp. grated Parmesan cheese

Brown beef and onion in oil, leaving in bite size chunks. Push meat mixture to side of pan and add spinach, water, tomato, salt, and oregano. Break up spinach and bring to a boil.

Stir in rice, cover, remove from heat and let stand 5 minutes. Sprinkle with cheese and serve. Serves 4.
