BEEF AND SPINACH 
1 tbsp. butter
1 tbsp. olive oil
1 med. chopped onion
1 c. chopped fresh mushrooms
1 lb. ground sirloin
3 eggs, slightly beaten
1/2 tsp. fresh crushed garlic
1 tsp. oregano
1 tsp. salt
1 tsp. freshly ground pepper
6 c. coarsely chopped raw spinach (or 1 box thawed, chopped frozen spinach)

Melt butter and oil in large skillet. Add onion and saute briefly. Mix in mushrooms and meat, cook until meat is brown. Add eggs and seasons and stir over medium heat until eggs are almost cooked. Stir in spinach and cook a few minutes longer, until spinach is barely wilted. If using frozen spinach, cook until warm through. Serves 6.
