CREOLE BEANS AND RICE 
1 lb. dry beans
1 lg. onion, chopped
Hot cooked rice
1 lb. smoked link sausage, sliced
1 tbsp. Cajun seasoning

Sort and wash beans and cover with water. Bring to a boil. Cover and cook 2 minutes. Remove from heat; set aside. Let stand 1 hour.

Bring to a boil, reduce heat and simmer until beans are almost tender, about 2 hours. Add remaining ingredients, except rice. Continue cooking until beans are tender and a thick gravy is formed. Serve over rice.
