CREOLE RED BEANS AND RICE 
1 lb. dried kidney beans, soaked overnight
1 c. chopped onions
1/2 c. green onion tops
1/2 c. chopped parsley
1/2 c. chopped bell pepper
2 garlic cloves
1 tsp. red pepper
1 1/2 tsp. bacon drippings
3 dashes Tabasco sauce
1 (8 oz.) can tomato sauce
1/4 tsp. oregano
2 lbs. smoked sausage, cut in pieces
Hot cooked rice

Place beans in large pot with water and cook covered for approximately 1 hour. Add remaining ingredients except for sausage and rice. Cook for an additional hour on medium heat, stirring occasionally.

Add sausage to the beans and cook over low heat uncovered for another 45 minutes. Serve over hot rice with hot cornbread.

Substitute: 3 cans kidney beans for dried beans.
