BANANA CAKE WITH PEANUT BUTTER
ICING
 
2 1/4 c. flour
1 1/4 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 c. mashed very ripe bananas
1 c. buttermilk, room temperature
2/3 c. shortening, room temperature
1 1/2 c. sugar
2 eggs, room temperature
1 tsp. vanilla

ICING:

1 (8 oz.) pkg. cream cheese, softened
1/2 c. light corn syrup
1/2 c. chunky peanut butter

Combine flour, baking powder, baking soda and salt; set aside. In separate bowl, combine bananas and buttermilk. Set aside.

Cream shortening and sugar until light and fluffy. Add eggs. Beat in vanilla alternately. Add flour and banana mixture. Beginning and ending with flour. Spread in greased and floured 13 x 9 x 2 inch pan. Bake at 350 degrees for 30-35 minutes. Cool and frost.

Serves 20.
