CHEESE MUFFINS 
1 egg, beaten
3/4 c. milk
1/2 c. vegetable oil
2 c. all-purpose flour
1/3 c. sugar
3 tsp. baking powder
1 tsp. salt
1 c. grated cheese, Cheddar, Monterey Jack with peppers (any hard or semi-hard cheese will do)

Heat oven to 400 degrees. Grease bottoms only of 12 medium muffin cups. Take beaten egg, stir in milk and oil. Mix flour, sugar, baking powder and salt and add to egg mixture all at once. Stir just to moisten, add cheese fold in once or twice. (Batter will be lumpy.) Fill muffin cups 3/4 full. Bake until golden brown, about 20 minutes. Remove immediately from pan. Yield: 1 dozen.
