CHICKEN LASAGNA ROLL - UPS 
6 lasagna noodles
1 lb. cooked chicken (white meat preferred)
1 (15 oz.) ricotta cheese
1 (8 oz.) pkg. Mozzarella cheese, shredded
1 egg
1/2 c. chopped fresh parsley
1 (14 oz.) jar of sauce or your own

Prepare lasagna noodles, drain and place in a non-stick cookie sheet, cool. Mix cheeses, eggs and half of parsley. Pour 1 cup of sauce in baking dish.

To Assemble: On 1 lasagna noodle spread the cheese mixture over noodle, place a few pieces of chicken and roll up. Place seam side down in sauce. Sprinkle with shredded cheese and parsley. Bake 45 minutes at 350 degrees.

When I make these I use a rotisserie chicken to make it easy. They disappear in no time!

This was very good. But just to add some few notes. 9X9 baking dish. Use uncooked chicken. I used a whole jar of Rinaldi Garden Combo (has a lot of flavor) I added some sauce to the top of the noodles before baking as well.
