APPLE AND PINEAPPLE CHICKEN 
1 chicken, cut in parts
6 tbsp. butter
1 tsp. sugar
2 c. peeled, chopped apples
1 c. pineapple chunks
1 tbsp. lemon juice
Grated rind from 1 lemon
1 tsp. salt
1 tsp. paprika
1 c. bread crumbs

In saucepan, place butter and melt over medium heat; add sugar, apples, pineapple, lemon juice and lemon rind. Mix well. Cook 5 minutes over low heat. Sprinkle salt and paprika on chicken.

In shallow dish, place bread crumbs; add chicken and turn to coat. in large baking pan, place chicken in single layer, skin side up. Pour fruit mixture over chicken. Bake, uncovered, basting every 20 minutes in 350 degree oven about 1 hour and 15 minutes or until fork done. Makes 4 servings.
