ZUCCHINI PICKLES 
4 quarts zucchini
1 head cauliflower
1 onion
1 red pepper
1 c. celery
1 green pepper
1 c. carrots
Hot pepper flakes

Let zucchini set in ice water for 3 hours.

Cook celery, onions, cauliflower and carrots 5 minutes.

DRESSING:

4 c. sugar
3 c. vinegar
1 tbsp. mustard seed
1 tbsp. celery seed
1 tsp. pickling spice
1 tsp. turmeric
Dash hot pepper flakes

Bring dressing to a boil. Add vegetables. Boil 3 minutes. Have jars hot. Have lids boiling in water. Fill jars and seal.
