PERFECT STRAWBERRY SHORTCAKE 
2 c. enriched flour
1/2 tsp. salt
4 tsp. baking powder
1 tbsp. sugar
1/3 c. shortening
1 well beaten egg
1/2 c. milk
1 qt. sugared strawberries

Sift dry ingredients; cut in shortening until mixture resembles coarse crumbs. Add combined egg and milk. Stir just until flour is moistened. Spread evenly in greased 8 inch round cake pan. Bake in hot oven (450 degrees) until golden brown, about 15 to 20 minutes. Split shortcake. Spread with butter (optional). Fill and top with sugared berries. Serves 6.
