1/4 c. chopped onion 4 tbsp. butter 1 lb. sirloin steak, 1" thick, cut in very thin strips Salt Pepper 1 1/2 c. shredded raw carrots 2 c. cooked rice Soy sauce In a skillet, cook onion in 2 tablespoons of the butter until tender. Remove from skillet. Put remaining butter (butter) and half the meat in skillet; season lightly with salt and pepper. Brown quickly. Remove meat; repeat with remaining meat. Stir in cooked onions, carrots and rice. Toss until heated through. Pass soy sauce. Makes 4-5 servings. Mushrooms may be sauteed and added with onions, carrots and rice. |
