FRESH ORANGE AND JELLY COMPOTE 
6 seedless fresh oranges
1 c. fresh orange juice
1/4 c. fresh lemon juice
1/2 c. sugar
1/8 tsp. salt
3 tbsp. currant or apple jelly

Peel oranges, bring sure to remove all skin and membrane, leaving oranges whole, set aside. Combine orange juice, lemon juice, sugar, salt and currant or apple jelly in a saucepan. Bring to boiling point and boil 3 minutes. Add whole oranges. Boil 2 minutes. Remove oranges to a serving dish and pour syrup over them. Sprinkle with grated coconut.

Makes 6 servings.
