CARROT CAKE | |
CAKE: 2 c. flour 2 c. sugar 2 tsp. baking powder 1 1/2 tsp. baking soda 2 tsp. cinnamon 1 tsp. salt Nuts 4 eggs, beaten 1 1/2 c. cooking oil 2 c. grated carrots 1 can sm. crushed pineapple, drained Raisins Cream sugar, oil, and eggs. Add sifted dry ingredients. Mix well. Add carrots, pineapple, raisins and nuts. Pour into 4 well greased and floured 8 inch cake pans. Cook at 350 degrees for 40 minutes. ICING: 8 oz. pkg. cream cheese 1 lb. box powdered sugar Juice from pineapple 1 stick butter 1 tsp. vanilla Cream butter and cream cheese. Add 1 pound box powdered sugar and juice from pineapple and 1 teaspoon vanilla. |
