CARROT BAKE 
6 med. fresh carrots, about 1 lb., cut into 2" x 1/4" strips
1 med. head cauliflower, about 2 lbs, separated into flowerets
1/4 c. butter
1 tsp. salt
1/4 tsp. ground nutmeg
Grated Parmesan cheese (opt.)

Heat oven to 375 degrees. Arrange carrots in ungreased baking dish, 11 3/4" x 7 1/2" x 1 3/4". Layer cauliflowerets over carrots. Dot with butter and sprinkle with salt and nutmeg. Cover and bake until vegetables are tender, 50 to 55 minutes. Sprinkle with cheese and garnish with parsley. 6 servings.
