MASHED POTATO CASSEROLE 
3-4 lg. potatoes (cook and mash)
1/3 c. sour cream
1 tsp. salt
Dash pepper
1/2 tsp. sugar
1/4 c. butter

Add enough milk to bring to desired consistency. Beat until fluffy then add: 2 tsp. chopped chives 1 c. cooked and well drained spinach

Place in greased casserole and top with 1 cup grated Cheddar cheese. Bake 20 minutes at 400 degrees.
