MASHED POTATO CASSEROLE 
3 c. mashed potatoes
1 (4 oz.) cream cheese
1 egg, beaten
2 tbsp. chopped onion
1 tbsp. parsley
1 tbsp. butter

Beat cream cheese in potatoes. Add egg, onion and parsley. Pour in well greased casserole. Dot with butter and sprinkle with paprika. Bake 30 minutes at 400 degrees. May be made ahead. May use instant potatoes.
