MOIST OATMEAL CAKE WITH 2
FROSTINGS
 
1 c. oats
1 1/2 c. boiling water
1 c. white sugar
1 c. brown sugar
1/2 c. shortening or butter
2 eggs
1/2 tsp. salt
1 1/2 tsp. vanilla
1 tsp. baking soda
1 1/2 c. flour

This is a very moist cake. Soak oats in boiling water 20 minutes. Cream sugars, shortening and add eggs. Mix all dry ingredients. Add moist oats when cooled to creamed mixture and stir in dry ingredients.

Broiled topping frosting for hot cake in a hurry, mix: 1 1/2 c. brown sugar 1/2 c. evaporated milk 1 c. coconut 1/2 c. oats 1/2 c. chopped nuts

Spread on hot cake. Place under broiler until light brown. Alternate frosting for cold cake: 1 c. brown sugar 1/4 c. milk 2 c. confectioners' sugar

Heat butter in saucepan until it melts. Add brown sugar. Mix and heat until it boils. Reduce heat, cook, stirring a few minutes. Stir in milk, mix over low heat until it boils. Remove from heat. Cool to warm and add confectioners' sugar. Beat until smooth and creamy. Spread on cooled cake.
