CHOCOLATE MOUSSE CAKE 
1/8 tsp. cream of tartar
1 stick butter
7 oz. chocolate chips
7 eggs
1 tsp. vanilla
1 c. sugar

Beat egg yolks for 5 minutes on high gradually adding 3/4 cup of sugar. Melt butter and chocolate chips together. Slowly add this to the egg yolk mixture. Add vanilla. Mix just until blended. Beat egg whites with tartar until foamy. Gradually add 1/4 cup of sugar. Beat until stiff. Fold egg whites into chocolate mixture. Pour 3/4 into an 8 inch spring form pan. Cover the remaining 1/4 and place in the refrigerator. Bake in 325 degree oven for 35 minutes. Remove from oven and cool completely. Gently remove from pan by sliding butter knife along sides of pan. Top with the chocolate mixture that is in the refrigerator. Refrigerate several hours before serving.
