LEMON CAKE | |
1 box Duncan Hines moist deluxe yellow cake mix Following mixing directions on box. Add: 3 tbsp. lemon juice Mix well. Take out 1/2 cup batter for icing. Bake in 2 cake pans until done at 350 degrees for about 30 minutes. Cool. ICING: 1 1/2 c. sugar 2 tbsp. corn syrup 1/2 c. water 1/2 c. cake batter 3 tbsp. lemon juice Cook sugar, corn syrup and water until mixture forms a soft ball when dropped in cold water. Remove from heat and add cake batter, 1 tablespoon at a time, beating well. Cook 5 minutes. Remove from heat and add 3 tablespoons lemon juice. Beat with mixer until thick and creamy. Spread on cake. If icing runs off cake, it will harden, so put it back on cake. |
