BAKED SCALLOPS 
1 lb. sea scallops
1/2 stick melted butter
1 oz. dry sherry
1/2 c. or less dry, fine bread crumbs
Salt to taste
Lemon wedges

Preheat oven to 375 degrees. Butter a large, flat casserole. Lay out the scallops. Drizzle with butter and sherry. Sprinkle on crumbs and salt. Bake uncovered at 375 degrees for 15-20 minutes. Surprisingly tasty for something so simple. Serve with Lipton's long grain & wild rice with sauce mix that comes in a packet and a green vegetable. Put lemon wedges on the side.

I used finely crushed Ritz crackers instead of Italian bread crumbs. Tossed instead of sprinkled. Added a more buttery flavor without diminishing the taste of the scallops...excellent!
