BAKED STUFFED SCALLOPS 
2 lbs. scallops
1 stick butter
1 med. onion, chopped
1 tsp. minced garlic
3 to 4 shakes of parsley
1/2 c. cooking sherry
1 to 2 tsp. crushed pepper
Bread crumbs, plain or seasoned

In skillet, melt butter. Add onion and minced garlic. Simmer until onions are clear. Add pepper and parsley and simmer for a few minutes. Add cooking sherry and simmer 10 to 15 minutes.

Place in square casserole. Pour onion mixture over scallops. You should have enough to cover scallops. If not, melt more butter and add. Cover top very generously with crumbs and bake uncovered at 400 degrees for 30 minutes. May brown top by putting under broiler for a few minutes.
