BROILED OR BAKED SCALLOPS 
1/2 c. butter
1 c. bread crumbs
1 fresh lemon
1/4 tsp. white pepper
Paprika
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/2 c. white wine
1 tsp. parsley flakes
Pkg. of bay scallops (16 oz.)

Melt butter. Add wine, juice from lemon, pepper, garlic, onion, and parsley flakes. Simmer mixture for about 5 minutes. Arrange scallops in baking pan, sprinkle with bread crumbs, spoon on liquid. Sprinkle with paprika and stir. Bake about 5 to 7 minutes at 400 degrees or place under broiler and broil until browned (stirring constantly).

This was our Valentine's Day dinner and it was excellent. We only used about half the amount of bread crumbs. We sprinkled, stirred and then sprinkled a little more. The lemon flavor came through subtly but wonderfully.

Easy, yummy recipe. The white wine I used was a bit strong and the flavor carried through; will user a softer wine next time. I also sprinkled basil on top at the end which gave the dish a nice finish.
