STIR-FRIED VEGETABLE MEDLEY 
3-4 summer squash
1 med. onion
1 med. bell pepper
1 can sliced mushrooms
2 fresh tomatoes

To be cooked in microwave. Place approximately 2 tablespoons cooking oil in a large skillet. Finely slice all vegetables and add to skillet. Stir fry over medium heat, stirring constantly, about 5 minutes. Cover skillet and allow vegetables to steam over low heat until they reach desired degree of doneness. Season with salt, pepper, or seasoned salt as desired. NOTE: Any available fresh vegetables may be substituted or added. Broccoli is good. 4-6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
