STIR FRY CHICKEN 
2 chicken or turkey breasts
Onion
Celery
Summer squash
Snow peas
2 c. cooked rice
1/4 stick butter
Salt and pepper to taste
Paprika

Debone chicken, cut into one inch cubes or slices. Chop up vegetables and put close by. Heat skillet and melt butter to highest temperature without browning. Add chicken chunks into skillet without letting them touch.

Cook on all sides without browning, seasoning while they cook. Increase heat and add vegetables turning all ingredients occasionally. Within 5 to 10 minutes pour over rice.

I have added and substituted vegetables as they have been available.
