FRIED RICE 
1 lb. ham, chicken or turkey, diced
1 lb. bag frozen mixed vegetable, thawed
2 sprigs green onion, chopped
6 eggs, scrambled
6 - 8 cups cooked rice (left over rice would be fine)
4 tbsp. cooking oil
Soy sauce, salt and pepper to taste

Stir fry the green onion and dice ham in 1 tablespoon vegetable oil; set aside. Stir fry the mixed vegetable in 1 tablespoon oil until tender; set aside (you may have to add a little water). Stir fry the rice in 2 tablespoons oil; add soy sauce, salt and pepper to taste while stirring. Add the ham, mixed vegetable and eggs and stir. Serve warm. Yields 12 servings.
