FRIED RICE AND MUSHROOMS 
2 eggs
3 tbsp. oil
1 onion, minced
1/2 lb. mushrooms, sliced
4 c. cooked cold rice
2 tsp. soy sauce
Salt and pepper to taste

Beat eggs. Heat 1 tablespoon oil in frying pan. When oil is hot, add the eggs and cook like a flat pancake. Cut cooked egg into thin strips. Add 1 tablespoon oil to pan and saute onions and mushrooms until tender. Put in the remaining oil. Add the rice and the pieces of egg. Mix together the soy sauce, salt, pepper and add to rice. Cook over medium flame until heated. Serve immediately. Serves 4.
