CHICKEN STIR FRY 
3 whole chicken breasts
3 tbsp. cooking oil
3 tbsp. lite soy sauce
1 clove garlic
1/2 c. sliced fresh mushrooms
1/2 c. summer squash if available
1 green pepper
1 med. onion, cut in chunks
1/3 c. sugar
2 tbsp. flour
Salt and pepper to taste
1/2 c. water

Put oil, chicken breast (cut in bite size chunks) in large cast iron skillet. Sear meat at a high temperature. Mince garlic and cut up onion and place them in pan next. Simmer at medium heat 10 minutes. Next put soy sauce and remaining vegetables in; simmer 10 minutes. Next put sugar and 1/4 cup water. Take mixture off heat for 2 minutes. Add flour and 1/4 cup water mixture. Place on heat for additional 5 minutes. Salt and pepper to taste; add more soy sauce to taste. Serve over rice. Serves 6.
