SCALLOPED POTATOES 
2 lbs. potatoes
1 lg. onion, chopped
1 can cream of mushroom soup
1/4 lb. Velveeta cheese, cubed
1/2 stick butter
1 c. ham or smoked sausage, cubed
1/3 c. milk
Salt & pepper to taste

Boil sliced, peeled potatoes until tender. While potatoes are cooking in medium saucepan, combine milk, cheese and butter over low heat. (Being careful not to scorch.) After cheese is melted, add cream of mushroom soup to mixture. Drain potatoes and pour into 10 x 13 inch pan. Add ham or sausage and onion. Pour cheese mixture over potatoes. Bake in 350 degree oven for 1 hour or in microwave-safe dish in microwave for 1/2 hour or bake.

Since microwave ovens vary in power, you may need to adjust your cooking time.
