CRAB CASSEROLE | |
1/2 lb. cooked crab meat 1/4 c. chopped onion 1/2 c. chopped celery 3 tbsp. butter 2 tbsp. all purpose flour 1/2 tsp. salt and dried mustard 1/8 tsp. white pepper 1 1/3 c. milk 1/2 c. shredded Swiss cheese 1/2 c. shredded cheddar cheese 1/4 c. Parmesan cheese 2 hard cooked eggs Flake crab meat. Remove any shell. In medium saucepan, cook onion and celery over medium heat. Stir in flour, salt, mustard, and pepper. Cook until bubbly. Remove from heat. Gradually blend in milk. Cook until thickened. Add 1/4 cup of each cheese. Remove cheese sauce from the heat. Fold in crab and eggs. spread mixture in greased shallow 1 1/2 quart dish. Sprinkle remaining cheese on top. Bake uncovered at 400 degrees until heated through, brown and bubbly, 10-15 minutes. Serves 4. |
