LONE STAR CHILI 
2 tbsp. vegetable oil
2 med. onions, chopped
3 cloves crushed garlic
1 lb. beef top round, trimmed of fat & dried
3 tbsp. chili powder
1 (12 oz.) bottle beer
3/4 c. beef broth
3/4 c. water
1/4-1/2 tsp. ground cayenne pepper
Warmed flour tortillas, optional

In 12 inch skillet, over medium-high heat, heat oil. Add onions and garlic, stirring frequently until onions are softened. Add beef, cook about 5 minutes. Stir in chili powder, cook and stir 1 minute. Stir in beer, broth and water; bring to boil, reduce heat to low. Simmer uncovered 30 minutes. Stir occasionally. Remove from heat; stir in ground red pepper to taste. Yield 4 servings.
