CHILI 
2 lb. top sirloin steak, ground coarse
2 lb. top sirloin steak, cubed in 1/4 inch pieces
3 green peppers
3 lg. onions, chopped
Some snipped parsley
3 (1 lb.) cans tomatoes, chopped into 1 inch pieces
1/4 c. chili powder
2 tbsp. salt
1 1/2 tsp. black pepper
1 1/2 tsp. cumin
1 oz. Tabasco sauce

Brown meat in 1/2 cup butter. Pour off 1/3 cup liquid from meat. Saute onion, green pepper, garlic and parsley in liquid until tender. Add to meat mixture with tomatoes, chili powder, salt, pepper, cumin and Tabasco sauce.

Simmer 1 hour, covered. Take lid off and simmer 1 hour longer. Stir occasionally. If you like kidney beans, rinse a 1 pound can and drain. Add to meat during last half hour of cooking.
