ZUCCHINI AND MEAT CASSEROLE 
1/2 lb. lean ground beef or chopped pork
1/2 c. green chile, chopped and seeds removed
1 c. whole kernel corn
1 med. onion, chopped
1 tsp. salt
2 lbs. fresh zucchini, unpeeled and cut into cubes or 1/2 inch slices

Brown meat in small amount of oil or in own fat. Drain extra fat. Add onion and cook until soft, but do not brown. Add corn, chile, and salt; cook 15 minutes. Add zucchini and simmer 20 minutes.
