ZUCCHINI BREAD 
1 c. sugar
3 eggs, beaten
2 c. zucchini, grated
3 c. flour (plain), sifted
1 tsp. baking soda
1 tsp. ginger
1 c. nuts, chopped
1 c. brown sugar
1 c. oil
3 tsp. vanilla extract
1 tsp. salt
2 tsp. cinnamon
1/4 tsp. baking powder

Combine sugars, oil, and eggs. Beat until well blended. Add zucchini and vanilla. Sift and measure flour with salt, soda, cinnamon, ginger, and baking powder. Stir into creamed mixture, blending well. Add nuts. Pour into greased and lightly floured pan. Bake 1 hour at 325 degrees.
